
Here is Little E enjoying Dad's homemade cranberry sauce on Thanksgiving. He cracks me up, a lot of times when he tries something new he'll make the most horrible face. Then he'll try another bite and love it! This was the case with The Sauce. Hideous shocked pucker face. Then scarfing it down! (This photo is definitive proof that we don't believe in bibs! Ha, ha.)
Our day was peaceful and our dinner was yummy. Dad cleaned up some tables around here that had become overrun with papers and such. I made a substantial dent in our mountain of laundry. Dad put Little E in our minkee-lined Baby Hawk mei tai for his afternoon nap (see pic, that's Ludwig the Cat sharing Dad's lap!) and I started dinner.
And here's our vegan Thanksgiving meal: a vegan "celebration roast" (we got this at Whole Foods), roasted asparagus, Dad's cranberry sauce, Dad's mashed potatoes and gravy, of course! And for dessert... vegan pumpkin "cheese" cake!!! (Thanks to The Joy of Vegan Baking! Yum!) A very simple meal, but full of those warm Thanksgiving-y feelings for us!
Dad made the mashed potatoes and cranberry sauce, here's what he did :DAD'S MASHED POTATOES
5 pounds organic red potatoes (no need to peel these! yay!!)
160z Tofutti "sour cream"
1 stick (1/2 cup) Earth Balance buttery sticks
soy milk (use as much as you need to reach your desired consistency)
salt & pepper to taste
Wash those potatoes, cut them up and boil them until they're soft enough to mash
Mash 'em up with all the above ingredients
Use an electric beater to make 'em extra smooth
DAD'S CRANBERRY SAUCE
2 cups fresh organic cranberries (we used a 7.5 oz pack)
juice of one large orange
3 tbsp water
3/4 cup brown sugar
Combine all ingredients in a medium sized pot
Bring to a boil
then simmer until the cranberries pop open
Sauce will thicken as it cools
